powder as well as curry powder
of various blends. They are packed
bulk or in consumer packs as required

Green

In the
processing of green pepper products
like dehydrated green pepper,
green pepper preserved in brine,
canned green pepper, etc., much
care is required to select good
quality as the original size,
shape and color will be important
in the product. Where as in sun
dried black pepper the blemishes
or other defects on the berries
will not be a factor of concern
as the end product shrinks and
turns black. So green pepper processing
requires much care in selection
of raw materials compared to conventional
black pepper. |

Lately
there has been considerable improvements
in the production of pepper by
virtue of research and development
conducted by government aided
research organisations. A number
of new hybrid varieties have been
developed which produce good yield
per acre, and are better in their
spice value. The first hybrid
product in the world named Panniyoor
I was developed in Kerala by cross
pollination of two traditional
varities namely Cheriya Kaniyadan
and Uthiran Kottah. This new variety
is the best among all with a Volatile
Oil Content of 5.2% and 11.8%
of Oleoresin (in which there is
5.2% of piperine alkaloid) . |
